                                                Oil						2 tbsp
 - 
Garlic, chopped fine				2 tsp
 - 
Hara Pyaaz, cut into ½” pcs, including leaves	½ cup
 - 
Frans Bean, cut into 2-3 pieces each		125g (12-15)	]

Carrots, sliced into thin rounds			125 g (2 small)	]
 - 
Phool gobhi, cut into small flowerets		250 g		] blanched
 - 
Simla Mirch, cut small				125 g 
 - 
Almonds, blanched, peeled and roasted		¼ cup
 - 
Mix for sauce:
 - 
Cornflour					1 tbsp	]
 - 
Water						1 cup	] blended together
 - 
Soya sauce					½ tsp
 - 
Salt						2 tsp or to taste
 - 
Celery powder					½  tsp OR
 - 
Celery, chopped					2 tbsp
 - 
Vinegar						1 tbsp
 - 
Sugar						1 tsp
 - 
Powdered black pepper				¼ tsp

                                      Preparation

                                        - 
                                          Heat the oil and saute the garlic and onions over high heat till onions look  ‘fried’. 
 
Add the blanched vegetables and capsicum and stir-fry over high heat. 
Lower the heat and add the sauce mixture, bring to a boil, stirring all the time, then cook over low heat for a couple of minutes.  
Add the almonds, reserving some for garnish. 
Serve hot garnished with the remaindered almonds.
