                                                Arrowroot biscuits, crushed fine		100 g (about 15)
Butter, melted				¼ cup (60 g)
Powdered sugar				2 tbsp
Paneer (Indian Cottage Cheese), mashed smooth	300 g
Condensed milk, sweetened		1 cup
Lemon juice				¼ cup
Mango, sliced decorate on top
Round moulds to set the ‘bites’
Sugar syrup to brush the mango.

                                          Mix the crushed biscuits, melted butter and powdered sugar and sauté over high heat till heated through. 
Pat the biscuit mixture into the base of the tins, patting to pack the mixture tight and firm. Leave to cool. 
In the mean time, mix together the paneer, condensed milk and lemon juice and beat till smooth (you can even blend together in a blender). 
When the biscuit ‘crust’ is cool, transfer the paneer mixture into the tins, smooth to level and leave to set in the refrigerator overnight. 
When set, ease out the set rounds and arrange on to a serving dish. 
Arrange the mango decoratively over the set dish, brush with some syrup and serve.
