Ghutti Hui Khichdee

A mix of daal and rice, cooked to a soft consistency

  • 1-cup (180 g) basmati (long grain rice)
  • 1/2 cup (90 g) Dhuli Moong ki daal (Husked Green Gram)
  • 2 tbsp ghee (clarified butter)
  • 1 tsp jeera (cumin seeds)
  • 1/8 tsp heeng (asafoetida)
  • 1 tsp salt or to taste


  • Pick and wash the rice and the daal, wash well and place in a heavy based saucepan or a `handi’ along with the salt and about 4 cups water.
  • Bring to a boil and then lower the heat and simmer till the rice and daal are tender and soft, more like gruel. Adjust the water according to the consistency you desire.

  • Heat the ghee and add the jeera. When the seeds splutter, add the rice and lentil mixture, and mix well.

  • Serve hot accompanied by some pickle and yogurt.
