Lemony Prawn and Coriander Soup

A tangy, clear soup with prawns

Type: Fat Free Serving: 4 Cooking Time: 20-30 minutes


  • Stock 4 cups
  • Prawns, cleaned and deveined 250 g ]
  • Vinegar 2 tsp ] marinate for 10 mins and wash off
  • Salt 1 tsp ]
  • Onions, finely chopped 2 tbsp
  • Lemon juice 2 tbsp or to taste
  • Chilli sauce 2 tsp, or to taste
  • Salt 1 tsp or to taste
  • Powdered black pepper tsp
  • Hara dhania broken into small pieces 1 cup


  • Bring stock to a boil. Add prawns, onions, lemon juice, chilli sauce, salt, black pepper and the dhania. Bring to a boil and simmer for 1 minute or till the prawns are cooked through (they just curl up and become opaque). You must be very careful not to over cook the prawns. Sometimes the frozen ones take even less than a minute as they are partially cooked.
  • Place dhania leaves in the soup bowls, pour soup over and serve.
