Chicken and Coriander Soup

  • Water 6 cups
  • Lemon Grass stalks 2, beaten flat lightly
  • Ginger 1” cube, crushed lightly
  • Green Chilly, slit 1-2
  • Boneless chicken, cut into tiny cubes 250 g
  • Onions, finely chopped 2 tbsp (25 g)
  • Lemon juice 2 tbsp (30 g) or to taste
  • Salt 1 tsp (5 g) or to taste
  • Powdered black pepper ¼ tsp
  • Coriander leaves (Hara dhania) broken into small pieces ½ cup (approx. 50 g)


  • Make the stock: bring the 6 cups of water to a boil and add the lemon grass, ginger and green chilly. Bring to a boil and then simmer for about 10 minutes or so, till almost 1 cup of water has evaporated.
  • Strain the liquid and discard the solids. Transfer the ‘stock’ into the pan again and bring it to a boil.

  • Add chicken, onions, salt, and black pepper and bring to a boil, lower the heat and simmer till chicken is tender (10-12 minutes).

  • Add the lemon juice and simmer a minute or so.

  • Place coriander leaves in the soup bowls, pour hot soup over and serve.
