Egg Salad

Made with Mayonnaise and boiled eggs

Type: Salad Serving: 4-6 Cooking Time: 10 minutes


  • Eggs, full boiled and chopped 6
  • Mayonnaise sauce (below): 1 cup
  • Oregano , dried tsp
  • Mustard powder 1 tsp
  • Lettuce leaves 8
  • Mayonnaise Sauce
  • Egg,  (preferably at room temperature) 1
  • Vinegar 2 tbsp
  • Salt 1/2 tsp
  • Powdered black pepper 1/8 tsp
  • Mustard oil 1/4 tsp
  • Sugar 1/2 tsp
  • Refined groundnut oil 1 cup


  • Make the mayonnaise: Break egg into the jar of a blender (liquidiser). Add the vinegar, salt, pepper, mustard oil and sugar. Switch on blender at full speed, and immediately add the oil in a thin stream, with the blender on, all the time, till the required consistency is reached. This is like a thick cream.
  • Mix eggs, mustard, oregano and mustard together with mayonnaise.

  • Line a serving dish with the lettuce leaves, heap the egg mixture in the center and serve chilled.
