                                                Maida (Refined Flour)			2 ½ cups (300 g)

Atta (Whole Wheat Flour)			1 ½ cups (225 g)
 - 
Dahi (Yogurt)				1 ¼ cups (250 g), approx.

Salt					1 tsp
 - 
Meetha (Baking) soda			1 tsp
 -

                                          Add the salt and the baking soda to the flour. 
 
Knead the flour to a soft dough, with the help of the yogurt-- A finger should press into it without pressure.  
Cover the dough with a damp cloth and leave to rise a little in a warm, draught-free place, for 2-3 hours. 
Knead the dough a little again and break it up into small walnut sized pieces and shape  into smooth balls.  
Roll  these into 1/4cm/1/8” thick rounds  and keep ready for frying. 
Heat the oil till a piece of dough thrown in comes up at once. Put a rolled round in and press gently with a slotted spoon in the centre, so that it puffs up. Turn it over and fry till a light brown on both sides.
