                                                Semolina (Soojee) 2 cups
Yogurt (Dahi), sour 1 cup
Salt 1 ½ tsp or to taste
Oil 2 tbsp

Mustard seeds (Rai) 1 tsp
Pea-nuts, roasted and peeled ½ cup
Dried Whole Red Pepper (Sabut lal Mirch), broken	1-2

                              |

                                    | Preparation |
                                    |

Mix the semolina and yogurt together till it forms a smooth batter of dropping consistency, adding some water to it.
Add salt to it, and keep aside.
Keep a griddle (tava) over a low flame to heat.
In a flat heavy based pan with a lid, heat the oil.
Add curry leaves, mustard, red peppers and peanuts and saute till a little fried. Keep aside.
Mix the enos in ¼ cup water and stir vigorously till frothy.
Transfer this mixture immediately into the pan with peanuts, cover and place over the griddle.
It takes 15- 20 minutes to cook. A knife inserted in the center should come out clean when done.
Loosen edges and turn upside down into a serving plate and serve with chutney on the side.
