Prawn Cocktail

Prawns in a chilled Thousand Island Dressing

Type: Fish/Seafood Serving: 4 Cooking Time: 20 mins excluding chilling time

Ingredients

  • Prawns, shelled and deveined 250 g (weight after cleaning)
  • Eggs, full boiled   2
  • Cabbage or lettuce leaves (crisped) for lining the serving dish
  • Celery, chopped ¼ cup
  • Thousand Island Dressing 1 cup (approx.)
  • Serving glasses/bowls for individual servings 4
 

Preparation

  • Bring enough water to barely cover prawns to a boil. Add half of a lemon, sliced or cut in chunks, and let boil for 1 minute.
  • Lower heat so the water is barely simmering, and add prawns. Make sure they are all covered with water. Simmer for approximately 3 minutes or until the prawns turn pink. Remove from heat.

  • Plunge prawns into a bowl of ice water to stop cooking and leave to drain out the water completely.

  • If the prawns are small enough to be left whole leave them thus but if too large for one bite, cut into pieces accordingly.

  • Peel and finely chop the eggs.

  • Mix the prawns, eggs, half the celery and enough dressing to coat the mixture well and some extra. Leave to chill till ready to serve.

  • To serve, line the serving glasses with the cabbage or lettuce, and spoon one helping of the prawn mixture over each.

  • Garnish with the celery and serve chilled.
