Almond Soup

A simple soup with almonds

Type: Soups Serving: 4 Cooking Time: 15 minutes after almonds have been soaked

Ingredients

  • Almonds, blanched and peeled : 50 g (¼ cup)
  • Butter : 2 tbsp. (30 g)
  • Flour (Maida) : 4 tbsp. (30 g)
  • Water : 4 cups
  • Milk : ½ cup (120 g)
  • Salt to taste or : 2 tsp (10 g)
  • Black pepper (Kali Mirch), freshly powdered : ¼ tsp (1 g)
  • Cream : 4 tbsp ( 60 g)
 

Preparation

  • Chop half the almonds fine and blend the rest with the milk in a blender.
  • Melt butter and sauté the chopped almonds till lightly fried.

  • Add flour and sauté till an aroma emanates.

  • Add water gradually stirring all the time so no lumps remain, then bring to a boil.

  • Add milk mixture along with salt and pepper and bring to a boil, and then simmer for 8-10 minutes, stirring occasionally.

  • Serve garnished with the cream.
