Chicken and Coriander Soup

Ingredients

Water 6 cups

Lemon Grass stalks 2, beaten flat lightly

Ginger 1” cube, crushed lightly

Green Chilly, slit 1-2

Boneless chicken, cut into tiny cubes 250 g
-
Onions, finely chopped 2 tbsp (25 g)

Lemon juice 2 tbsp (30 g) or to taste

Salt 1 tsp (5 g) or to taste

Powdered black pepper ¼ tsp
-
Coriander leaves (Hara dhania) broken into small pieces ½ cup (approx. 50 g)

Preparation

Make the stock: bring the 6 cups of water to a boil and add the lemon grass, ginger and green chilly. Bring to a boil and then simmer for about 10 minutes or so, till almost 1 cup of water has evaporated.
Strain the liquid and discard the solids. Transfer the ‘stock’ into the pan again and bring it to a boil.
Add chicken, onions, salt, and black pepper and bring to a boil, lower the heat and simmer till chicken is tender (10-12 minutes).
Add the lemon juice and simmer a minute or so.
Place coriander leaves in the soup bowls, pour hot soup over and serve.
