Masala for Dosas

The traditional potato filling for dosas

Type: Snacks Serving: For about 15 dosas Cooking Time: 30 minutes


  • Potatoes, boiled, peeled and cubed 500 g (3 cups)
  • Onions, sliced not very thin 250 g (1 1/2 cups)
  • Green chillies, chopped coarsely 2 (optional)
  • Oil 2 tbsp (30 g)
  • Mustard (Sarson) seeds 1 tsp
  • Curry leaves (Kadhi Patta) 6-7 or 1/2 tsp dried curry leaves
  • Salt 2 tsp
  • Powdered Turmeric (Haldi) 1/4 tsp
  • Water 1/2 cup (approx.)


  • Heat the oil in a heavy based pan and add the mustard seeds. When they begin to splutter, add the onions, curry leaves and green chillies, and sauté over high heat till the onions are a little transparent.
  • Add the salt and the turmeric and mix well, before adding the potatoes. Turn the potatoes around till well mixed, and add the water, and let it simmer, for about 2-3 minutes. You can serve the filling separately if you so desire.
