Sweet and Sour Prawns

Ingredients
|

250 g prawns (weighed after cleaning) ]
-
1 tsp salt and 1 tbsp lemon juice ] mix together and wash off
-
1 egg, slightly beaten
-
½ cup cornflour
-
½ tsp garlic paste
-
½ tsp ginger paste
-
Water
-
Oil for deep frying
-
2 tbsp oil
-
1 tsp finely chopped garlic
-
½ cup coarsely chopped onions
-
¼ cup capsicum, chopped to match the onions
-
¼ cup carrots, chopped to match the onions
-
For sauce, mix together:
-
2 tbsp cornflour, blended with ½ cup water
-
¼ cup vinegar
-
1 ½ tsp salt
-
1 tbsp sugar
-
¼ cup orange or pineapple juice
-
2 tsp soya sauce ( or less, if it is very dark)
-
6 tbsp tomato puree
-
2 tbsp chopped celery or ¼ tsp celery salt
-
1 cup water

Preparation

Mix together the prawns, egg, cornflour, garlic and ginger paste, and enough water so as to have the prawns coated in a thickish batter.
Heat the oil and keeping the heat high fry the prawns till brown. Drain on absorbent paper till required.
Heat the 2 tbsp oil, and stir-fry the garlic and onion in it over high heat, till the onions look glossy. Add the capsicum and carrot and turn around a few times. Add the sauce mixture, and simmer till the sauce thickens and becomes translucent.
Add the prawns, turn around a few times and serve.
