Bacon and Onion Fried Rice

Ingredients

Bacon rashers, shredded thin 4-5

Oil 2 tbsp (30 g)

Spring Onion, thickly sliced 1 cup (1 large) (100 g)

Garlic paste ˝ tsp

Celery, chopped fine 1 tbsp.

Soy Sauce 1 tsp
-
Vinegar 2 tsp
-
Chilli sauce 1 tsp

Rice 1cup (210 g)

A spring onion for garnish

Preparation

For garnish, peel the spring onion head and make cuts going down to the base. Take some of the leaves and cut into thin strips. Place both these in iced water till ready to use (they will curl up and look decorative).
Boil the rice ‘bite-like’ and rinse immediately under cold water till cool. Work 1tbsp. oil into it and leave to drain.
Heat the rest of the oil and add the bacon, onion, garlic and celery and sauté over high heat for about 2-3 minutes, till onions look transparent but not soft, and the bacon also looks fried.
Add the rice, soy sauce, vinegar and chilli sauce and continue to stir-fry over high heat till well mixed.
Serve hot garnished with the spring onions or garnish of your choice.
