Gajar ka Halwa

A sweet from carrots

  • Carrots, grated 1 kg
  • Milk 1 kg (5 cups)
  • Sugar 125 g (1/2 cup)
  • Cardamom (elaichi), powdered 1 tsp
  • Almonds, blanched and shredded 5-6
  • Raisins (kishmish) 8-10
  • Clarified butter (ghee) 2 tbsp


  • In a wok or a wide mouthed pan with a heavy base, place the carrots and the milk, and bring to a boil.
  • Cook the two together, till most of the milk has evaporated (high or low heat depends on how often you can stir it, to avoid scorching).

  • Add the sugar and continue stirring, till the carrots have a slightly glossy look and the moisture has evaporated.

  • Add the cardamoms and `ghee' and half the almonds and raisins, and mix well.

  • Transfer onto a serving dish and garnish with the remainder of the almonds and raisins.
