Mango Gateau

Sponge Cake layered with cream and mango

  • A 4 egg   Sponge Cake
  • Mango, peeled and sliced 2-3
  • Mango juice cup ]
  • Lemon juice 2 tsp ] mixed together
  • Cream, chilled 1 cups (360 g)
  • Powdered sugar 2 tbsp
  • Almonds/Walnuts, chopped 2 tbsp
  • Mint leaves for decoration


  • Beat cream and sugar together till cream holds shape (if cream is not thoroughly chilled, keep over ice and beat, otherwise it will form into butter).
  • Place one sponge on a serving dish, upside down, and remove the paper. Sprinkle half the juice mixture over.

  • Spread a layer of mango slices and sprinkle nuts over it. Spread a layer of the whipped cream.

  • Place the other sponge upside down over this, remove the paper and sprinkle with the rest of the juice.

  • Cover the cake with the cream and decorate with mango slices, nuts and the mint leaves. Chill and serve.
