Semolina Pudding

Semolina based Baked pudding

  • Oven Temp: 375 F-180 C
  • Milk ˝ litre (2 ˝ cups)
  • Semolina (Soojee) 90 g (3/4 cup)
  • Eggs, separated 2
  • Vanilla essence 1 tsp
  • Sugar 120 g (1/2 cup )
  • Almonds, shredded and roasted, to garnish
  • A greased oven proof serving dish


  • Mix the semolina in some milk, till mixed well without lumps, and add the rest of the milk. Bring the mixture to a boil, and then simmer till a little thick—about 10 minutes.
  • Take the pan off the heat and add the sugar and vanilla.

  • Beat the egg yolks, add the milk mixture to it and mix well. Leave to cool.

  • When cool and beginning to set beat the egg-whites stiff and fold into the mixture.

  • Pour the mixture into the dish, sprinkle the nuts over it and bake in a pre-heated oven for 30-35 minutes.
