Chicken and potato soup

  • Butter 1 ½ tbsp butter + 1 tbsp oil
  • Boneless chicken, shredded 1 cup
  • Onions, thinly sliced ½ cup
  • Potatoes peeled and cubed ½ cup
  • Flour (maida) 2 tbsp
  • Stock 3 cups
  • Salt 1 ½ tsp or to taste
  • Black pepper ¼ tsp
  • Tomatoes, grated ½ cup
  • Basil leaves, sliced fine 1 tbsp heaped
  • Ajwain leaves, sliced fine 1 tbsp heaped
  • Cream for garnish


  • Heat butter and oil together till butter is melted.
  • Add the onions and stir fry till soft.

  • Add the potatoes and chicken and stir fry over high heat till chicken is opaque.

  • Add the maida and sauté till mixed well into the ingredients and add the stock, salt and pepper.

  • Bring to a boil and then simmer till potatoes and chicken are cooked.

  • Add the tomato, basil and ajwain leaves and simmer for 2-3 minutes.

  • Serve hot garnished with the cream.
