French Onion Soup

Strongly flavored with onion

Type: Soups Serving: 4 Cooking Time: 30-40 minutes


  • Onions, sliced thin and uniform 250 g
  • Butter 3 tbsp
  • Oil 1 tbsp
  • Salt 2 tsp or to taste
  • Clear Stock 5 cups
  • Kali mirch, freshly ground tsp
  • Eggs 4 (optional)
  • Bread slices, cut into rounds 4
  • Grated cheese 4 tbsp
  • Oven-proof soup bowls 4


  • Heat butter and oil together and brown the onions in it over medium heat till a rich brown.
  • Add stock and bring to a boil, then simmer over low heat for 12-15 minutes.

  • Add the salt and pepper.

  • Place an egg in each bowl, and pour hot soup over.

  • Cover the bread round with the grated cheese and place on top of the soup.

  • Place the bowls under a griller and grill till the cheese is melted a bit and a light brown, and serve.
