Paanki

a rice flour batter, fermented and cooked in a banana leaf—Swati in Bombay

Type: Rice Varieties Serving: 6-8

Ingredients

  • Dahi/Curds/Yogurt 1 cup (200 g)
  • Rice Flour 2 cup
  • Haldi ¼ tsp
  • Green Chilli and garlic paste 1 tsp
  • Salt 1 tsp or to taste
  • Oil 1 tbsp
  • Banana leaves, cut to size
  • Oil to grease leaves
 

Preparation

  • Mix all ingredients except banana leaves and oil to grease it.
  • Cover and leave to ferment 6-7 hours or overnight.

  • Take a piece of the banana leaf and smear a thin layer over it, in a circular motion.

  • Cover with another piece of leaf, greased side down.

  • Lift the two together and place over a hot griddle (tawa). Cook on one side, flip and cook on the other.

  • Fold into two and serve.
