Baingan ki Kachri

Sliced Eggplant, fried and served as a side dish

Type: Snacks Serving: 4 Cooking Time: 30 minutes


  • 1-2 long baigans (egg plants) of the thick variety
  • Oil to fry the baingans
  • Besan (Chick-pea flour)to dust the baingan slices ]
  • tsp salt ] mixed together
  • tsp chilli powder ]
  • 2-3 tomatoes, de-seeded and chopped fine ]
  • salt to taste ] mix together
  • powdered black pepper to taste ]
  • Hara Dhania (Coriander leaves) for garnish


  • Slice the baingans into rounds about thick and dust with the maida mixture.
  • Heat the oil and fry the baingans till brown and cooked through but still firm.

  • Drain on to an absorbent paper, top with the tomato mixture and serve garnished with the hara dhania.
