A rice salad with an orange dressing |

Ingredients
|

Long-grained rice 1 cup, soaked for ½ hour

Lemon juice 1 tsp
-
Oil 1 tbsp
-
Mixed vegetables, diced and blanched 2 cups
-
(like, carrots, capsicum, cabbage, broccoli, cauliflower, etc.)

Orange Dressing:
-
Mix together:

Fresh Orange Juice ½ cup
-
Celery salt ½ tsp
-
Salt 1 ½ tsp or to taste

Kali Mirch (powdered black pepper) ¼ tsp
-
Ajwain (thymol seeds), roasted 1 tsp
-
Sugar 1 tsp

Preparation

Drain rice and place in a pan with 1 ½ cups of water. Bring to a boil.
Lower heat, sprinkle lemon juice, cover and let cook over low heat for 9 minutes (rice is ‘bite like’).
Drain in a colander and cool under cold water. Rub in the oil and leave to drain and cool.
Mix together the rice, vegetables and the dressing.
Transfer on to a serving dish, chill and serve.
