Saada Nimbu ka Achaar

A simple pickle of nimbu -- sour limes, which you could make with lemons--gulguls, too

  • 1 kg nimbu (sour limes) , washed and wiped dry, and cut into 4 pieces each
  • 1 1/4 cup (250 g) salt
  • 1 cup (25 g) sabut lal mirch  (whole red peppers)
  • 1 tsp heeng (asafoetida)    
  • 1/4 cup (60 g ) powdered sugar (optional)


  • Mix all the ingredients together, rubbing them well into the cut limes.
  • Transfer into the jar and sun for a month or so.
